Strawberry Jam (Microwave)

Now this is just my type of recipe…….very very easy, very very quick and oh so very very yummy ;0)

 

Ingredients:

500g Strawberries

20ml Lemon Juice

350g White Sugar

1 Teaspoon Butter

Method:

  1. Place strawberries in a deep 2.5 litre microwaveable dish.
  2. Sprinkle Lemon Juice over and cover dish with cling film.
  3. Microwave the strawberries for 5-7 minutes on 100% power until soft.
  4. Add the Sugar and stir until all the sugar has dissolved.
  5. Microwave the Strawberries for about 20 minutes on 100% power, stirring every 2 to 3 minutes to make sure it does not boil over.
  6. To test if the jam is thick enough, spoon a small amount on a cold side plate, push with your finger and if it ripples, the jam is ready.
  7. Stir in the Butter and let stand for 30 minutes.
  8. Spoon of the foam on top, if there’s any, bottle and seal immediately.

Tip: Remember, Warm preserves get bottled in warm jars, cold preserves in cold jars.

A little more about me: Nelmarie Rennison, married to Christopher for 6 years, together for 12. Two lovely kiddies, Nicholas 3 1/2 and Allegra just over a year. South African, lived in Russia for two years and now loving living in the UK. Diagnosed with MS in 2000 and never felt better :D I am just as grateful for dust blowing in my eyes as I am for Angels sitting on my shoulders. I love my family, my friends, my life and I am grateful for each new morning. Looking forward to get to know you better xx
