Paprika Turkey in Sour Cream

Serves: 4


50g Butter

450g Turkey escallops

2 Onions, chopped

1 green Pepper, chopped

1 red Pepper, chopped

1 tablespoon Paprika

1 tablespoon All-Purpose Flour

275ml Sour Cream


  1. Melt the butter in a large saucepan and add the turkey and fry briefly.
  2. Using a slotted spoon remove the turkey and set aside.
  3. Add the onions and the peppers to pan and fry for about 15 minutes until soft.
  4. Sprinkle the paprika over the onion mix and cook for about 2 minutes, stirring constantly.
  5. Return the turkey to the pan and cover.
  6. Cook for 15 minutes until the turkey is tender. Stir halfway through.
  7. Again, with a slotted spoon remove the turkey and keep warm.
  8. Sprinkle the flour into the pan and cook for about 3 minutes, stirring constantly.
  9. Stir in the Sour Cream and cook for another 5 minutes.
  10. When the sauce starts to thicken, take it off the heat.
  11. Pour over the turkey to serve.

Tip: To keep the dish plain and quick to make, serve it with some egg noodles tossed in a little butter.

Living the life of an Expat can sometimes get very lonely and the blog has not only brought the whole world into my kitchen but I have met so many gorgeous Foodie Friends. I am so happy that I have taken the plunge and started PaperCup. I am not a brilliant writer, I am not a brilliant chef, I am not a brilliant baker BUT I do invite you into my kitchen, take your shoes of, relax, have a bite to eat and let's have a chat. A little more about me: Nelmarie Rennison, married to Christopher for 6 years, together for 12. Two lovely kiddies, Nicholas 3 1/2 and Allegra just over a year. South African, lived in Russia for two years and now loving living in the UK. Diagnosed with MS in 2000 and never felt better :D I am just as grateful for dust blowing in my eyes as I am for Angels sitting on my shoulders. I love my family, my friends, my life and I am grateful for each new morning. Looking forward to get to know you better xx
