This salad can not be any easier to make and is a gorgeous crunchy winter salad. The French Blue Cheese in the dressing gives the salad a little added bite and really worth adding to the salad.
1-1½ cup of Celery, chopped
3 red Apples, quartered and with skin on
100g Walnut pieces
Ingredients For the Dressing:
1 Garlic clove, finely chopped
2 tablespoons Cider Vinegar
3 tablespoons Olive oil
3 tablespoons Walnut oil
75g Roquefort cheese
Salt and Black Pepper to taste
- Place the garlic in a bowl with the vinegar, salt and pepper.
- Add the oils, tablespoon at a time and beat the mixture well after each addition to form a thickened dressing.
- Crumble the cheese into the dressing and beat until smooth.
- Put the celery, apple and walnut pieces in a serving bowl and pour the dressing over.
- Toss lightly and serve.
Tip: Pour some lemon juice over the apples to prevent it from going black. Use some of the celery leaves to garnish the salad.
