Elderflower and Berry Jelly

Yet again, Elderflower is the star in this recipe and it’s gorgeous. Perfect for a hot summers day. This recipe is adapted from BakingMad.com.

Makes: 6

Ingredients:

300g Mixed Berries

4 Gelatine Leaves

150ml Elderflower Cordial

2 tablespoons Caster Sugar

420 sparkling Grape Juice, chilled

Method:

  1. Spoon a tablespoon of the mixed berries into the bottom of 6 glasses and refrigerate.
  2. Place the gelatine leaves into a bowl, cover with cold water and let soak for 10 minutes.
  3. Pour the cordial into a bowl, drain the gelatine and add this to the cordial.
  4. Place the bowl over a pan of simmering water and heat until the gelatin is completely dissolved.
  5. Add to sugar to the cordial mix and stir till dissolved. Take of the heat and let cool for a few minutes.
  6. Pour the sparkling grape juice into the cordial mix and then pour into the chilled glasses.
  7. Chill in the fridge until set, this will take 2-3 hours.

Hi there everyone. I am Nelmarie, but please call me Nel. I, like so many people out there enjoy cooking and baking. Food makes me smile and it makes my heart beat faster. The only place where I know I fit just perfectly, is in the kitchen. A little more about me: Nelmarie Rennison, married to Christopher for 6 years, together for 12. Two lovely kiddies, Nicholas 3 1/2 and Allegra just over a year. South African, lived in Russia for two years and now loving living in the UK. Diagnosed with MS in 2000 and never felt better :D I am just as grateful for dust blowing in my eyes as I am for Angels sitting on my shoulders. I love my family, my friends, my life and I am grateful for each new morning. Looking forward to get to know you better xx
