Balsamic Roasted Pork Sausages

This is just one of those,  easy – no fuss –  leave in the oven to do its own thing, kind of dishes. Real tasty, so much so that Nicholas asked for seconds, which is a real treat….seeing that he does not eat meat, peppers, onions or tomatoes 🙂

Serves: 4



2 Red Onions, cut into wedges

2 Red Pepper, cut into quarters

2 tablespoons Olive Oil

2 tablespoons Balsamic Vinegar

8 Pork Sausages

Handful of mushrooms, halved

250g Cherry Tomatoes

2.5 ml dried Thyme

Salt and Pepper to taste

1 tablespoon Clear Honey


  1. Pre-heat the oven to 180°C.
  2. Put the onions and peppers in a roasting tin.
  3. Drizzle the olive oil and balsamic vinegar over and season well.
  4. Roast for 15 minutes.
  5. Put the sausages, mushrooms, tomatoes and thyme,  in and around the vegetables.
  6. Drizzle the honey over everything and roast for 30 minutes,with a quick toss after 15 minutes.
  7. Serve with French fries (chips), mustard mash or freshly baked crusty bread.

Hi there everyone. I am Nelmarie, but please call me Nel. I, like so many people out there enjoy cooking and baking. Food makes me smile and it makes my heart beat faster. The only place where I know I fit just perfectly, is in the kitchen. I am not a brilliant writer, I am not a brilliant chef, I am not a brilliant baker BUT I do invite you into my kitchen, take your shoes of, relax, have a bite to eat and let's have a chat. A little more about me: Nelmarie Rennison, married to Christopher for 6 years, together for 12. Two lovely kiddies, Nicholas 3 1/2 and Allegra just over a year. South African, lived in Russia for two years and now loving living in the UK. Diagnosed with MS in 2000 and never felt better :D I am just as grateful for dust blowing in my eyes as I am for Angels sitting on my shoulders. I love my family, my friends, my life and I am grateful for each new morning. Looking forward to get to know you better xx
